I had this craving for brownies AND pavlova over the weekend so a date was set Saturday night. Just me, my mixer and the oven.
It is such a great mash-up of my two favorite desserts: chocolatey, cakey layer topped with crisp meringue softened with softly whipped cream. The strawberries added the fresh element that paired together with both the cream and chocolate. The famous Calamansi Muffins made popular by a cafe in island resort Boracay has been in my list to bake all these years.
Thought it'd be a great idea to use up the last of my calamansi haul (for now) to bake into cup-size tart morsels.
The recipe involves creaming the butter with sugar until light and fluffy which makes for a tender crumb. The liquid component uses Carolinehttp://www.blogger.com/profile/15116781195928711601noreply@blogger.com0tag:blogger.com,1999:blog-3354943562201802247.post-91525490544146712142015-01-12T21:29:00.001-08:002015-12-06T15:14:35.127-08:00Calamansi Bundt Cake
Celebrating winter and it's citrus bounty with cake made from fruits native to my home country: calamansi.
Even though I have a small tree that's been good to me, I still get a thrill when I come across them in the markets and try to hoard them.
My family has been enjoying drinking calamansi juice and wanted to make something else different besides the usual curd Carolinehttp://www.blogger.com/profile/15116781195928711601noreply@blogger.com5tag:blogger.com,1999:blog-3354943562201802247.post-17049892357053344512013-03-05T01:33:00.000-08:002013-03-05T01:34:41.368-08:00Calamansi, Blood Oranges & Honey Tangerine Cornmeal Upside-Down Cake
Woohoo, a new post! This is totally unplanned (but then so was my 16-month "hiatus" LOL ) but surprising events this past week led me to sign back in to this blog and give it an update.
(For all the wonderful people who left comments while I was away: Thank You! They are much appreciated and will reply to each one of you as soon as I can.)
So where have I been? What I've been up to? Well, Carolinehttp://www.blogger.com/profile/15116781195928711601noreply@blogger.com8tag:blogger.com,1999:blog-3354943562201802247.post-82570479733716257842011-11-21T01:43:00.000-08:002011-11-21T01:43:54.019-08:00Rocky Road Muffins
Is it just me or does the days going by way too fast? November seemed like it just started but it just hit me Thanksgiving will only be a few days from now. Next thing, Christmas will be around and we'll be welcoming 2012 --Ack, I'm certainly not ready for the holidays just yet.

Chocolate: check. Cream cheese: check. Streusel: check. This week we start the Muffin Monday series on holiday muffins. And what a great muffin to start! All the different components you could ask for in a muffin are all here: rich chocolate flavor and creamy cheese topped with crumbly streusel.
Inspired by all the pumpkin recipes this Halloween season, I added some to the cream cheese. But when Anuradha sent us the challenge to bake Citrus Coconut Muffins, I immediately thought calamansi (kalamansi) so I knew I couldn't refuse baking these.
The original recipe asked for zest from lemons and oranges and I used calamansi all the way. I am happy to welcome another week with these Clementine Date Muffins.

I am not much of a fan of carrot cakes so was surprised to find these carrot spice muffins to my liking.

Itlog na Maalat (salted duck eggs) and kamatis (tomatoes): the quintessential Filipino side dish. Though labeled as a salad, it is not eaten before the main meal customary in Western dining. It's more considered a side dish to be eaten along with your ulam (viand) and of course, steamed rice.
A few months ago in Spring, the egg vendor at my farmers market was selling duck Carolinehttp://www.blogger.com/profile/15116781195928711601noreply@blogger.com16tag:blogger.com,1999:blog-3354943562201802247.post-30014865849336511742011-09-20T02:17:00.000-07:002011-09-20T02:17:30.057-07:00Blackberry-Pecan Snack Cake for The Cake SliceThis will be the last month The Cake Slice will be baking from the book Cake Keeper Cakes by Lauren Chattman. It has been one of those weekends, very busy but enjoyed every minute of it! My mother-in-law had a small party at her house and she put me in charge of desserts. The Muffin Monday baking group is to bake Rum Raisin Muffins this week but I'm sure you can already tell these muffins don't have rum nor raisins. Let me explain.

It's Friday! The weekend's finally here. For me, that means going to the farmers market -- one of the things I look forward to all week.
Though, weekends are also lazy days at home so my family and I never get to the market as early as we would like. That means missing out on squash blossoms for these beautiful flowers always sell quickly. Ever since I joined Muffin Monday, I find myself looking forward more enthusiastically to Mondays. I mean a little baked good can really get your week to a great start. This week's recipe is Doughnut Muffins, the easiest recipe so far.

I can't believe it's been so long since I've posted! I was unexpectedly called to work in short notice and as always, it took longer than planned. I ended up working four weeks straight (mostly 16-hour days) with only a total of two days off. This surely got this little old blog of mine neglected.
