Strawberry Shortcake Scones for International Incident Party


Hooray, I finally made it to the party - the International Incident Party, a blog event started by Penny (of Jeroxie: Addictive & Consuming). It has taken me months trying to get in the party, from dumplings to noodles and tacos. But I encountered problems one after another: from camera not working to battery stopped charging and mostly running out of time.
This month, I made sure to make time since I was invited personally by Cherrie (of Sweet Cherrie Pie). She is co-hosting this month's party along with Anh (of A Food Lover's Journey) . I'm on the VIP list, I can't turn down this invitation, right? :)


Strawberry shortcakes are one of the easiest dessert to make: slice scones or biscuits in half, serve with macerated strawberries and topped with whipped cream. I had an idea to bake in the fresh strawberries into the scone batter which sure made it easier to eat as well since now you can eat them on the go!


If you are feeling indulgent, you could drizzle in some melted chocolate like I did on some of them.


Strawberry Shortcake Scones
makes about 24

1/2 pound strawberries, cut into 1/4-inch dice (about 2 cups)
1 tsp lemon juice, freshly squeezed
1/2 cup sugar
2 cups AP flour
2 tsp baking powder
1/2 tsp salt
6 TBSP unsalted butter, cold & cut into 1/2-inch pieces
2/3 cup heavy cream
Sanding sugar, for sprinkling
Melted chocolate, for drizzling (optional)

Preheat oven to 375 degrees.

In a medium bowl place strawberries, lemon juice, and 2 tablespoons granulated sugar. Stir and set aside.

In a large bowl, whisk together flour, baking powder, salt, rest of the sugar.

Cut in the butter with a pastry cutter (or fork) until it resembles coarse crumbs.

Stir in cream and strawberries until dough starts to come together.

Use a 1 1/2-inch ice cream scoop (or a tablespoon) to drop dough onto a parchment-lined baking sheet, 2 inches evenly apart.

Sprinkle with sanding sugar and bake for 22-24 minutes or until golden brown. Transfer parchment off the baking sheet to the cooling rack and let cool slightly then serve.

If drizzling with chocolate, let scones cool completely.

These sound so good, I'd probably gobble up a handful before I knew it. Great idea to add fresh berries to the dough. And glad you could join the party!

Im glad you were able to join the party. I was invited too (VP list din ako hehehe) but I didn't have the idea what scones to make... didn't have time to think and create... i could finish 4 of yours.. I gained 5 lbs already looking at it!

I really liked the way you scooped these up for baking using an ice-cream scooper! It saves messing about with the cookie cutter and it looks cute and just the right size for a bite! Good job with the recipe too.

Yes! A dessert scone!! These look almost bite-sized. Or maybe it's just because I could eat each of these in just one bit, they look that good. 8-) So happy you were able to join the party this month!
